FOOD: Recipe – Mezzi Rigatoni with Sausage and Radicchio

I’m not going to lie. I was a little turned off by the fact that food blogger, Herbie Likes Spaghetti has pictures of his cats mixed in with his cooking photos but I can look past that as this Mezzi Rigatoni with Sausage and Radicchio photo is making my stomach GROWL.

A new twist on a weeknight pasta with lots of flavor

Prep time: 15 min
Cook time: 20 min
Total time: 35 min

(Serves: 2 – 4)

1 lb sweet italian sausage
1/2 lb mezzi rigatoni
2 tsp fennel seeds
2 tsp chile flakes
3 cloves garlic
1/2 red onion
1/2 fennel bulb
1 head radicchio
1/2 cup red wine
1 cup tomato sauce
salt and pepper to taste

FOOD: Recipe – Cranberry Bliss Bar

Last night Mandy told me about her latest Starbucks find…..The Cranberry Bliss Bar.. Apparently this sucker is so good that the barrista who served Mandy said that she had been addicted to them the previous year and was avoiding them like the plague this holiday season.

So imagine my surprise when I was on FoodGawker and saw this Cranberry Bliss Bar recipe. I might need to try making these when I’m in Florida.

BLONDIE LAYER:
■3/4 cup (1 1/2 sticks) salted butter, cubed
■1 1/2 cups packed light brown sugar
■2 large eggs
■3/4 teaspoon orange extract
■2 1/4 cups all-purpose flour
■1 1/2 teaspoons baking powder
■1/4 teaspoon salt
■1/8 teaspoon ground cinnamon
■1/2 cup dried cranberries
■6 ounces white baking chocolate, coarsely chopped

FROSTING:
■1 package (8 ounces) cream cheese, softened
■1/2 cup powdered sugar, sifted
■6 ounces white baking chocolate, melted
■1/2 cup dried cranberries, chopped
■1 teaspoon orange extract

Directions:

1. Preheat the oven to 350 degrees F. Spray a 13×9-inch baking dish with nonstick spray.

2. Prepare the blondie layer: In a medium bowl, melt butter for one minute in the microwave; stir in brown sugar. Scrape the butter & sugar into a large bowl and let cool to room temperature. Use an electric mixer to beat in the eggs and vanilla. In a separate bowl, whisk together the flour, baking powder, salt and cinnamon; gradually add the dry mixture to the butter mixture. Stir in the cranberries and chopped chocolate (the batter will be thick).

3. Spread the blondie batter into the prepared pan. Bake for 18-21 minutes or until a toothpick inserted near the center comes out clean (do not overbake). Cool completely on a wire rack.

4. Prepare the frosting: In a large bowl, use an electric mixer to beat the cream cheese, orange extract, and powdered sugar until well-blended. Gradually add half of the melted white chocolate; beat until blended. Frost brownies. Sprinkle with cranberries. Drizzle with remaining melted white chocolate. Cut into bars- square or triangle-shaped. Store in the refrigerator until ready to serve.

GFJ: Pay it forward


Yesterday started out as just another monotonous work day and out of no where a compliment came my way which made my day.

Let me rewind. Whilst perusing Facebook.com, I noticed a girl I went to College with had posted something I blogged about. Naturally I “Liked” it which prompted her to send me a private message.

Now let me give you some background. This girl was a class above me. To this day, I refer to her group of friends as “the Sophomores”…Now she was that girl who all my guy friends had a crush on and my girl friends wanted to be. She is one of the few people who I’ve had hair envy over.

So imagine how humbled I was when I realized that this “sophomore” not only read my blog but actually liked something I had to say.. And when I replied to her PM that I appreciated her reading zee blog she told me, “Honestly, I look forward to it everyday”.

She made my day.

She also made me realize that I need to pay the compliment forward… So the next time the opportunity presents itself for me to give someone a compliment, especially to a friend I don’t normally speak to, I’m going to compliment away.

Actually, I think we should all take this lesson to heart. Something that seems so small to you can actually change another person’s day. So let’s keep it positive and sweet and help make everyone’s day be a better one.

Wednesday – Last night I went to hear my friend’s husband’s band play at The Living Room. It was amazing as the audience was made up of Wall Streeters, in their navy suits and Hermes (or Ferragamo) ties mixed in with people that looked like they were trying to emulate, “The Girl with the Dragon Tattoo” or those who had Occupied Wall Street.. I was giggling at the whole sight.

LUNCH: Leftover roasted chicken, stuffing and cauliflower
SNACK: Slice of cheddar…. I really need to toss the cheddar out but I won’t.
DINNER: Sushi with Mandy at Hana… But I have a confession. I went to the gym apres work and noticed that all the eliptical machines I like were taken. So, for a split second (and by second I mean a minute or two), I thought about going to The Smith and saddling up at the bar for a Dirty Martini and Calamari…I figured my dinner with Mandy wasn’t going to be until dead late so I’d be hungry again by then.. Luckily for my waistline a machine opened up and I worked out instead.

CELEBS: The Mara girls step out for the NYC premiere of, “The Girl with the Dragon Tattoo”….

Kate Mara donned a peach chiffon dress for the premiere of little sister, Rooney’s movie, “The Girl with the Dragon Tattto”…

While Kate looked sweet and girly, Rooney showed off some edge and skin in a Prabal Gurung dress… Thoughts?

FOOD: Recipe – Rosemary Cashews

Yesterday I was sent one of those recipe exchange emails. Truth be told, I was also sent one last week but I told Harmonica I couldn’t do it. The only reason why I did yesterday’s was because the person in the number 1 position (who I’d send a recipe to) is a designer whose clothes I lust after…. Now I’ve only received one recipe, from a woman in San Francisco. Which leads me to believe that the 20 people who I sent the email to totes flaked.. Which is fine cause one good recipe is better than none, right?

I can’t wait to make this Christmas Eve. I’m in charge of appetizers and sides.

Rosemary Cashews

1lb. roasted unsalted cashews
1T minced rosemary
1/4 t. cayenne pepper
2 t. light brown sugar
1-2 t. kosher salt
2T unsalted butter, melted

Preheat oven to 350 degrees. Spread nuts out on a sheet pan. Toast in
oven until very warm, about 7 minutes. In large bowl, combine rosemary,
cayenne, sugar, salt and butter. Thoroughly toss warm nuts with spiced
butter and serve warm. Enjoy!
