I love mashed potatoes. They are my thing. Every Thanksgiving and Christmas I’m charged with making them… They are fattening and I’m trying to cut our carbs at night.. So, I tried making Donna Hay’s GOAT CHEESE MASH… I whipped them up last night and am in LOVE.. I’m not normally a bean fan so I was shocked with the gusto in which I hate the Goat Cheese Mash… Seriously, YOU MUST TRY THEM OUT.
Donna Hay’s goat’s cheese mash
2 x 400 g cans cannellini beans, drained and rinsed
50g unsalted butter
1 clove garlic, crushed
110g goat’s cheese, crumbled
To make the goat’s cheese mash, place the beans in a bowl and mash until smooth. Heat the butter in a saucepan over low heat until melted. Add the garlic and cook for 1–2 minutes. Add the beans and cook for a further 2–3 minutes or until heated through. Add the goat’s cheese and stir to combine. Set aside and keep warm.
