GFJ (85) Rack of Lamb Dinner for Under $25…

Every Friday morning I go to Trader Joe’s and buy groceries for the week. This FORCES me to eat at home more often and save dinero.. Plus, I can control what ingredients go into the food I eat…

Last week I decided to make a rack of lamb. I was a little nervous as I’ve only made a rack of lamb once before and it was under the watchful eye of my mother….Luckily, I learned a few tricks from mi madre as my lamb turned out to be quite tasty.

How are your knife skills? When it comes to chopping, mine are fairly decent. When it comes to meat, NOT SO MUCH. I had to trim the fat off the rack and it was a joke.. I kept thinking how my mom always make trimming fat look so easy. In practice, it’s tough gong. After butchering the rack, I gave up.. (don’t worry, I trimmed the majority of it)…..

Then I realized I was missing the Italian Parsley that the Donna Hay Rack of Lamb with Lemon Gremolade required so I decided to wing it.

Potatoes.. As I made this on a Monday and I needed to hit the gym, I prepped before I went to Crunch. I halved the potatoes, put a little sea salt and olive oil on them and roasted in the oven (400 degrees for 45mins).

By the time I got back from the gym, the potatoes were nearly done…. So I took them out and started on the lamb.

For the Lamb, I trimmed that beast and salt and peppered it… Then I seared it on all sides. Once it cooled down a little, I put the rack on top of the potatoes and put my version of lemon gremolade on it.

Potatoes with Rack of Lamb pre-oven

My lemon gremolade:
Chopped fresh rosemary
Zest of one lemon
Juice of one lemon
Gluten free Bread Crumbs
Olive oil
Minced Garlic

I mixed all of this together, threw it on the lamb and put that lamb and potatoes in the oven for another 30mins. While that was cooking, I cleaned up the kitchen, did sit-ups and arm weights…

And then Lala came home, whipped up a salad with scallion dressing and we feasted.. All of this was under $25… AMAZING!

Monday
BREAKFAST: fage with strawberry and raw sunflower seeds
LUNCH: Trader joe’s tacos and salad
DINNER: lamb, potatoes and salad
